Chocolate Coconut Crackles
Asian Cauliflower 'Rice' Salad

2 cups cooked brown rice
1 red capsicum, thinly sliced
1 red onion, thinly sliced
1 large handful snow peas, thinly sliced
¼ red cabbage, thinly sliced
1 bunch flat-leaf parsley, finely chopped
1 cup cashews
1/3 cup pepitas or pumpkin seeds
1 tb avocado or coconut oil
1/3 cup rice wine vinegar
¼ cup tamari sauce (or soy sauce)
¼ cup agave nectar, honey, coconut nectar or pure maple syrup
Juice of 2 small lemons
2-3 small cloves garlic
Place all dressing ingredients in a blender and mix in high until smooth.
Heat pumpkin seeds and cashews in a fry pan on medium heat with oil, until golden brown in colour. Stir frequently.
Place all ingredients (except dressing ingredients) into a large bowl and stir to combine.
Pour dressing over and mix well.
